3 Ways From Sundae

Sundae Ingredients

The Starting Point

My perfect sundae begins with a bed of crushed (but not too finely – texture is key), meringue, Graham Crackers, Crunchie bar, and honey roasted peanuts. This is followed by scoops of good vanilla ice cream draped in chocolate ganache. To finish, more meringue, Graham Crackers, Crunchie bar, and honey roasted peanuts. To make the ganache, heat together 1/2 C cream and 4 oz chocolate – I like a mix of milk and dark – for 30 seconds in the microwave on high and then stir gently until smooth). I will occasionally layer peanut butter sauce (melt peanut butter in the microwave for about 30 to 45 seconds until pourable) beneath the ganache.

When you like something, you often try to find a multitude of ways to eat it – three of my favourite reincarnations of this sundae are Ice Cream Sundae Cake, Sundae Bars (how can you not love a chocolate bar wrapped in chocolate bar?), and Sundae Crepes.

Ice Cream Sundae Cake Recipe Title

Ice Cream Sundae Cake

  • 1 L Vanilla ice cream
  • 80 g Graham crackers
  • 25 g Meringue
  • 2 x 41 g Crunchie bars
  • 1/2 C Honey roasted peanuts
  • Chocolate for grating over the cake

 

  1. Transfer vanilla ice cream into a large mixing bowl and allow to stand for about 15 minutes until softened.
  2. Lightly crush the Graham crackers, meringue, Crunchie bars. The goal is to have rubble, not dust.
  3. Add this mixture to the ice cream along with the honey roasted peanuts and mix together until evenly distributed.
  4. Line a cake tin large enough to hold the ice cream with plastic wrap and transfer the ice cream mixture into the tin. Smooth the top of the cake so that it is evenly spread out. Cover with more plastic wrap and freeze until firm, at least 4 hours.
  5. Allow to stand at room temperatures for about 5 minutes before un-molding and transferring to a serving platter.
  6. Grate chocolate over the cake before slicing and serving.

 

Sundae Bars

Sundae Bars

  • 400 g Chocolate (a mix of milk and dark, to taste)
  • 150 g Unsalted butter, cut into 4 pieces
  • 1/8 t Fine salt
  • 80 g Graham crackers
  • 25 g Meringue
  • 2 x 41 g Crunchie bars
  • 1/2 C Honey roasted peanuts

 

  1. In a saucepan set over medium low heat, melt together the chocolate and unsalted butter
  2. Remove from heat and stir in fine salt
  3. Lightly crush the Graham crackers, meringue, and Crunchie bars. The goal is to have rubble, not dust.
  4. Add this mixture to the chocolate along with the honey roasted peanuts and mix together until evenly distributed.
  5. Line a 9” square cake tin with foil and transfer the mixture into the tin. Smooth the top so that it is evenly spread out. Cover with plastic wrap and refrigerate until firm, about 4 hours.

 

Sundae Crepes Recipe Title

For the Crepes:

  • 2/3 C All-purpose flour
  • 1/4 t Salt
  • 1/2 t Baking powder
  • 2 T Sugar
  • 2 Eggs
  • 1/2 C Milk
  • 1/4 C Water
  • Butter for greasing the pan

 

For the Toppings:

  • Whipped cream
  • Honey roasted peanuts
  • Lightly crushed Graham crackers, meringue, and Crunchie bar

 

For the chocolate sauce:

  • 1/2 C Whipping cream
  • 4 oz Chocolate pieces (a mix of milk and dark; ratios to taste)

 

  1. In a large bowl, whisk together the flour, salt, baking powder, and sugar.
  2. In a medium measuring jug, whisk together the eggs, milk, and water until blended.
  3. Pour the egg mixture gradually into the flour mixture, whisking until the batter is smooth and free from any lumps.  Refrigerate for half an hour.
  4. Preheat a medium-sized frying pan over medium heat.  Lightly grease with butter.
  5. For each crepe, pour in just enough of the batter into the pan to coat the surface thinly. Cook until light brown on the bottom.  The edges should be set.  Flip and cook the other side until lightly browned.
  6. Make the chocolate sauce by microwaving whipping cream and chocolate pieces on high heat for 30 seconds. Remove from the microwave and stir gently until completely melted and smooth. Set aside.
  7. Top the crepes with whipped cream, honey roasted peanuts, Graham crackers, meringue, Crunchie bar, and chocolate sauce.
