Good Starts: Popeye Edition

Scrambled Eggs with Spinach and BaconFeta gives eggs creaminess and savoury depth. If you do not like feta, substitute the cheese of your liking. Strong Cheddar, Gruyere, and Boursin are some good options.

  • 1/3 C Frozen chopped spinach
  • 1 to 2 Rashers of bacon
  • 3 Eggs
  • 1/3 C Crumbled feta or cheese of your choice
  • 2 t Butter
  1. Microwave the spinach until defrosted. Allow to cool and squeeze out excess liquid. Set aside and season with salt and pepper.
  2. Pre-heat oven to 425˚F and line a baking tray with foil. Cook the bacon on the tray until crisp, turning halfway through, about 15 minutes. Drain on paper towel and crumble. Put the spinach and bacon in the turned-off oven to keep warm while you make the eggs.
  3. Stir the eggs together with a fork in a bowl until well-combined.
  4. Add feta and stir to combine.
  5. Pre-heat a medium-sized non-stick or ceramic pan over medium-low heat. When the pan is warm, add in the butter.
  6. Once the butter has melted, add in the eggs. When the eggs begin to thicken and cook, stir leisurely and consistently until just set. Remove the pan from the heat immediately and transfer to a plate. Top with the spinach and bacon.

Chocolate smoothie

  • 2 Frozen bananas, quartered
  • 1/3 C Frozen, chopped spinach
  • 1/4 C Oats
  • 1 C Milk of choice (dairy/coconut/almond etc.)
  • 2 T Cocoa powder
  • 1 T Honey
  • 1 t Vanilla extract
  • Pinch Salt
  1. Combine all of the ingredients together in a blender and blitz until smooth.

Orange juice with spinach

  • 1 C Orange juice
  • 1/3 C Frozen, chopped spinach
  1. Combine all of the ingredients together in a blender and blitz until smooth.
