Cooking the salmon in a really hot oven for a short time keeps it wonderfully succulent. Deliciousness aside, I love this weeknight staple because it is incredibly quick and easy to make. You can pull this together with rice and veggies in less than 30 minutes. Don’t forget to drizzle the sweet and salty sauce over your salmon and rice after you plate it. Better yet, once you have plated all the salmon, throw some rice into the baking dish and use a spatula to gather all the remaining sauce and sticky bits which are caught on the pan to coat the rice and use up every last tasty drop. Waste not, want not.
